Ingredients

  • Tomato

  • Celery
    : 1/2 cup
  • Potato
    : 1 Small
  • Onion
    : 1 medium
  • Baby carrots/1 small carrot
    : 3-4
  • Garlic

  • Bay leaves
    : 3-4
  • Tomato Paste
    : 3 tablespoon
  • Water/Veg stock
    : 750 ml
  • crushed stock cube
    : 1
  • Fresh Basil
    : 5
  • butter
    : 2 tablespoon
  • black Pepper powder
    : 1 teaspoon
  • Cream
    : 1/4 cup
  • Milk.
    : 1/2 cup

PREPARATION

Soups are known to be the best diet forms of food. Its always good to have a light dinner and we prefer soups for dinner. Soups can also be served as starters or entree for a party. For me, this is the best dinner, healthy, filling and minimum carbs. Light on stomach and for a good night’s sleep. Since most of the soups I make, contains lots of fibres, helps with bowel movements too.

Tomato soup is one of the easiest soups to make. It can be made flavorsome by adding some spices and herbs. Tomato soup is a soup which holds several health vitalities. This soup is usually made during warm climate. Along with enjoying the flavors of tomato, it offers a range of health benefits because it provides phytonutrients, as well as essential minerals and vitamins. Tomato soup comes packed with beneficial lycopene — a red-hued nutrient that gives the soup its color. Lycopene offers powerful antioxidant protection, which means that it seeks out and neutralizes reactive oxygen species, a type of molecule linked to the aging process.

Chow down on tomato soup, you are sure get vitality and vigor. You will also boost your selenium and copper. Selenium plays an important role in male reproductive health by promoting healthy sperm development, and also nourishes your blood vessels, muscles and thyroid gland. Tomato also serves as an excellent source of vitamins A and C, two nutrients important for good health. Vitamin A helps control gene activity. This makes it important for tissue development, because it activates genes newborn cells need to grow into mature tissue.

This tomato soup is a creamy soup with a lil bit of potatoes and carrots so that the pungent tomato taste is balanced a bit. Tomatoes if made alone will give a tomato saucy flavor. To make it utter divine and to reduce the tartness of tomatoes, I added a small potato and 4-5 baby carrots. This will also help in making the soup thicker and creamy. Any soup is enriched by addition of stock. I always stock up broths of chicken, beef or vegetables in my freezer. I have used vegetable stock for this soup so that the extra flavor is added on making the soup more tastier.Celery, bay leaves, garlic, onions are all added in a marginal way so that the truthness of tomatoes are maintained, yet all these flavors are felt. Cream, butter and milk are the final things which makes this soup so divine. This soup can be slow cooked or pressure cooked. I do pressure cooking since it saves time, holds the nutrients and will be well cooked.

STEP 1

Cook till over done and mushy. Stick the lid on and pressure cook for 20 mts on medium flame after the first whistle. Once its done and pressure released, remove the bay leaves and add 1 crushed stock cube

 

STEP 2

5 Fresh Basil And then blend to a smooth fine soup. Put it back on stove. Add salt and boil. Once boiled, reduce the flame and add 1/2 cup Milk. Stir to combine

STEP 3

Allow it simmer for 5 minutes.

STEP 4

Finally add 2 tablespoon butter,1 teaspoon black, Pepper powder.Homogenize everything. Simmer further for 3 minutes. Switch off the stove and add 1/4 cup cream

STEP 5

Infuse well into the soup

Serve hot with toasted bread of your choice and Enjoy.
