For the dressing:

  • Lime juice
    : 1/4 cup
  • Salt
    : to taste
  • Olive Oil
    : 1 tablespoon
  • Garlic finely crushed
    : 1

For the Salad:

  • Parsley
    : 2 bunches
  • deskinned Cucumber
    : 1/3 cup
  • deseeded Tomatoes
    : 1/3 cup

PREPARATIN

Mediterranean cuisine is top rated amongst world cuisines. This is also considered one of the healthiest cuisines of the world. Fresh salads with different greens and vegetables can be seen in every meal. Mediterranean cuisines include all the cuisines of those countries which borders with the Mediterranean sea. This includes Lebanon, Syria, Turkey, Egypt, Israel, Morocco, Tunisia, Libya, Algeria along with Italy, Spain and France. You can find many common dishes and ingredients in all these countries.
Fresh Salads are the most similar ones which includes a lot of greens and burgul and couscous. Tabbouleh is a healthy salad which is super easy to make except the chopping part. The beauty and taste of this salad lies in its fine chopping. Parsley is the main component of this salad. Termed as a super food, this herb holds multiple nutritious and healing properties. Packed with essential nutrients, antioxidants and oils, this wonderful herb is used in Chinese and natural medicine.
For me, this herb is stored always in fridge. A bunch of parsley when boiled in a liter of water, helps in reducing urinary tract infections and formation of kidney stones. This is done at my home often as my husband is suffering from renal stones. Parsley benefits the body in many ways and is used in the effective natural treatment of many symptoms and diseases. The impressive health benefits of this herb comes from its active ingredients like phenolic compounds, antioxidant flavonoids, essential oil myristicin and apiol and nutrients like vitamins K, C and A.
This makes parsley an all natural and safe green to include in your diet in order to act as a free radical scavenger, heart, brain and gastrointestinal protector. This wonder herb is also an anti diabetic, antibacterial and anti fungal. Parsley also helps in bowel movements by regulating it and it also decreases bloating and indigestion. Anaemia, high blood pressure, acid reflux, edema, irritable bowel syndrome, arthritis are many areas where this green is proven to be effective. So always consider adding parsley in any food you prepare on a daily basis.
Apart from parsley, bulgur is other main ingredient along with cucumber, tomatoes and a dressing of olive oil. All these are virtually fat free except olive oil which is an unsaturated fat, due to which it is totally healthy. Bulgur is made from whole wheat which are fibrous and contains healthy complex carbs. It is also low in sodium and contains high amount of Calcium, Iron, Magnesium and potassium. Potassium which is found in red meat is found in bulgur and hence this is highly recommended for vegetarians. So try to include this salad as much as possible weekly in your diet as this is easy and cheaper to make.
Now coming to the preparation of this green salad, the most important part is cleaning and chopping. Wash the parsley in plenty of running water until all the impurities/sand is cleared completely. Please take caution to drain out all the water from parsley and use it dry as much as possible. Chop the tomatoes and cucumbers without the seeds and watery part. Chop it very finely. You can use seedless cucumbers if you have that option. What I do is chop it finely and drain on a sieve until all the juice is drained out.
I have followed the Lebanese style of tabbouleh. I have found the ratio of parsley immensely high and that of cucumber and tomatoes very low in this salad and have followed that method. It is up to you to adjust it according to your preference. Salad dressing of lime juice and olive oil along with salt is the original version. I have added a large clove of garlic to increase the health benefits.
Tabbouleh in nature is very sour due to the addition of a generous amount of lime juice. We are not fans of very sour food. So the quantity of lime juice added is to satisfy our palate. Pls do take a note of this. Guys, enjoy this absolutely healthy salad which is also easy to make

For the dressing:

Combine everything together. Set aside

 

 

For the Salad:

Mix all the ingredients along with the dressing. Combine thoroughly and serve fresh.
