Rice Macaroni with Pistachio Pesto and Greens

  • Rice macaroni cooked
    : 250gms
  • Roughly chopped spinach
    : 1cup
  • Roughly chopped parsley
    : 1cup
  • Zucchini cut into cubes
    : 1
  • Baby tomatoes
    : 6-8
  • Garlic flakes
  • Olive oil
  • Pinch of Dried thyme and basil

For the Pesto

  • Blanched pistachio with skin removed
    : 3/4 cup
  • Basil leaves
    : 1cup
  • Red cow peas
    : 1/2 cup
  • Pine nuts
    : 1/4 cup
  • Green chillies
    : 2
  • Garlic cloves
    : 4


Trying out vegan dishes is my latest passion. As a culinary enthusiast, its my prerogative to venture into different areas of gourmet supplies so that I get to formulate something new out of my kitchen often… No no no….this is not the only reason for this sudden change. My daughter turning vegan is the prime reason for this sudden shift of focus and interest. My interest also has started growing in this specific area of gastronomy.. Experimenting has been one of my greatest passion ever since I kept foot in the kitchen. My curiosity has started growing in this field. Ideas are floating in my head 24×7. So you can expect me with more and more authentic vegan fusion dishes.I’ve started out with a simple one and traditional one. Rice macaroni with Pistachio Pesto and Greens. I’ve tried to add in all sources of nutrients in this dish which is the prime reason for adding cow peas. Adding loads of fibre to your diet which the body needs is the prime motive for adding greens. For those of you who are pure non veggies, you can go on to add cooked and shredded chicken or meat after all the greens are sautéed with some stock. You can go in for left over ones too. I cooked chicken with some dried basil, pepper and garlic. Reserved the stock and shredded the chicken. You can do this according to your idea and convenience. To make it richer and tastier you can also grated cheese of your choice.


Step 1

Make a coarse paste of all these ingredients  for Pesto in a food pro. Set aside.


Step 2

Heat a pan and add zucchini. Saute till browned.Add the spinach and allow it to wilt. Add salt and finally parsley. Saute for a minute.


Step 3

Add the macaroni. Give a mix. Then add the pesto and combine well.Add the grilled tomatoes. Stir gently and serve hot.
