You might be thinking why I’m obsessed with Pesto. Frankly speaking, its all worth it. I had shared with you all different types of Pesto last week. These are so good and make our life easier, Whether its breakfast, lunch or dinner, this sauce is a sweet heart which is healthy, filling and can be turned into different food items. Sandwiches, pasta or bakes, in veggies or protein or as a sauce or dip.
I started experimenting pesto in all types of cuisines. That’s how I suddenly thought of this recipe. Making sandwiches are challenging as well as exciting for me. My kids refuse to take messy stuff to schools and college. So I have to depend on sandwiches for most part of the year for their tiff in. This pesto sandwich is an easy and healthy option. Layering it with some greens and veggies will make this a full filling meal.
Originating from the Liguria region of Northen Italy, pesto has always been prepared with crushed garlic, basil and European pine nuts blended with olive oil, Parmigiano Reggiano cheese. Climate is akin,y attributed for the popularity of this sauce. As every recipe evolve, this recipe also evolved during the course of years. There are many flexible ways of preparing pesto in the contemporary world. Pine nuts have been replaced with cashew nuts or almonds. Mint is added along with basil or gets replaced with cilantro and spinach. The interchangeable use of the nuts, greens and cheese have opened up an array of pestos bursting with flavors.

Dice, wash and drain the chicken.Marinate the chicken and rest for 10 minutes.
Chop the onions. Heat a pan with a tbsp of olive oil: add the onions and saute till transparent. Add the marinated Chicken. Mix up and cook till done. Pesto Chicken Filling is ready. Transfer to container and cool it down before you store it in fridge if you are not using it right away.
Melt 1 tablespoon Butter.Toast the bread slices till golden brown.
Spread Mayonnaise on one slice. Layer sliced Tomatoes, Chicken Spread, Sliced Avocado, Goat’s Cheese. Finally cover with the other slice of toasted Bread.
Enjoy for breakfast dinner or lunch or can serve it as Tiffin.
