Take a mixing bowl and mix 2 cups of Maida, 1/3 cup roasted Rice flour , 1/4 teaspoon Baking soda , 5 tablespoons Sugar , Salt to taste , 400 ml Water .
Whisk up the flour , Add water in batches and mix up thoroughly to get Thick smooth batter.Add 1 1/2 tablespoon dosa batter and combaine using your fingers. Beat fingers in forward and backward directions (This method will help in getting a perfect batter and helps in fermenting). Rest for 6 hours
Slightly fermented Batter combine again with your hand. Add 1/2 teaspoon Turmeric powder, 1/2 teaspoon Cardamom powder and again combine.Your batter is ready
Now take 4 ripe Plantains and peel off. Slice 1/4 inch thickness lengthwise and dip in the batter.
Take a pan and hot some oil.Add battered plantains into it.Take a deep fry until you see a yellowish golden brown.Your Chayakkada Pazham is ready. And now serve into a plate.
