Pancakes, a breakfast food which is patented as American, can be found in variable forms through out the nations of the world. Pancakes are usually thin flat cake made with a loose batter consisting of eggs, flour, oil milk or water, cooked in a frying pan or griddle. This is where the American pancakes stand apart. Thick, spongy and soft, these are made with eggs, milk, flour, butter or oil and rising agents.
Whatever the age of the primal pancake, it’s clearly an ancient form of food, as evidenced by its ubiquity in cultural traditions across the globe. The ancient Greeks and Romans ate pancakes, sweetened with honey; the Elizabethans ate them flavored with spices, rosewater, sherry, and apples. They were traditionally eaten in quantity on Shrove Tuesday or Pancake Day, a day of feasting and partying before the beginning of Lent. Pancakes were a good way to use up stores of about-to-be-forbidden perishables like eggs, milk, and butter, and a yummy last hurrah before the upcoming grim period of church-mandated fast. Believe me, this recipe is a hit one, which has been asked by many including Americans. These are quite literally cakes that you make in a pan. Also called hot cakes, flap jacks or griddle cakes, they have more of spongy soft texture.
American pancakes are often served in stacks with butter and maple/pancake syrup. American style pancakes began in the form of Johnnycakes, a savory flat bread made with cornmeal. The thickness of the batter allows many additions and filling to the batter. Fruits like bananas, apples and berries like blueberries and strawberries, chocolates, chocolate chips and even bacons are added to it make it more exciting.
Today’s Churros pancake is yet another version of modern pancake with flavors of cinnamon and vanilla and served with a chocolate sauce. This is is line with original churro recipe. Churros, a snack of Spaniards and Mexicans, have long been a working man’s breakfast or an after party snack in Spain which have gained popularity all over the world in the recent times. Churros are a tasty deep fried snack made with dough sticks, served with sprinkled cinnamon sugar and a dipping of chocolate sauce. Check out my blog for the details.
Churro pancake is in line with this dish. Generous amount of cinnamon is used in this dish. This is balanced by vanilla and chocolate. When making pancakes, never over mix the batter, which will reduce the flufiness of the pancakes. Pancakes are the right indulegence for the weekends. Not much time consuming yet very delightful. So keep trying out my different pancakes during the weekends.
In a bowl, combine the eggs and melted butter whisking lightly.
Add a cup of milk and homogenize.
Sieve the dry ingredients together and add to the egg mixture. Slowly incorporate everything adding more milk until you attain the right consistency.
Rest for 15 minutes.
Meanwhile, melt both the chocolates along with melted butter stirring continuously.
Add the cream cook on low flame till you get a saucy texture.
Switch off the flame and take out the sauce and add vanilla, combine.
Keep warm till pancakes are ready.
Heat an iron skillet. Rub with some butter.
Add a ladle of pancake batter and cook till bubbles start coming up.
Flip and cook till golden in color until all the pancakes are done.
