Basic Marinade

  • Cloves Garlic
    : 6-8
  • Cloves shallots
    : 5
  • Ginger piece
    : 2
  • Red chilli
    : 2
  • Peppercorns
    : 1tsp
  • Aniseed
    : 3/4 tsp
  • Turmeric Powder
    : 1tsp
  • Chilli Powder
    : 100gms
  • Salt
    : 3tsp
  • Vineager
    : 50 ml
  • Boiled and cooled water
    : 25 ml
  • Curry leaves
    : 1 sprig


This marinade recipe is one of my kitchen basics. I make a big batch of this and store it in the fridge. It lasts for months and is one of the most tried and tested recipes of mine. This can be used for fish, meat, chicken and even for paneer (cottage cheese) and Tofu. I used this in small amounts when I bake chicken of different types.This marinade is best for fish fry. If we add some chopped coriander, it’ll be amazing for chicken fry and bakes. Youcan even usethis for curries in an emergency situation. Just sauce some onions and tomatoes and add this marinade and addchicken or fish you get yummy chicken or fish roast in minutes.These are the small things which makes life easierfor you in your day to day to culinary activities at home.


Step 1

Place the garlic, ginger, chillies, peppercorns, aniseed, shallots and curry leaves in a grinder. Give it a thorough blitz.Scrape down and blitz once more.


Step 2

Add the powders and salt. Combine well by grinding for a minute. Scrape down the contents again and advinenow.Blitz once more and check the consistency and salt.Add the water according to consistency.It should be a thick paste.


Step 3

Store in a clean airtight bottle and refrigerate.You can add lemon juice when you marinate the fish for more freshness and aroma.
